INSAN Bamboo Salt is no ordinary salt. Sun-dried sea salt is packed into bamboo cylinders, sealed with ochre clay, and roasted nine times over a pine-wood fire — a labour-intensive traditional process.
The nine-roast technique was established around 1916 by Master Kim In-san, the originator of bamboo salt, and has been carried on by his family as INSAN Bamboo Salt for more than a century since.
Bamboo, pine and salt combine to give a distinctive mellowness and depth of flavour. It draws out the savour of a dish and has become a favourite of many as a salt that enriches the everyday table. Concentrating the bounty of nature, it leaves a clean impression the more you taste it — a product in which traditional wisdom lives on.
The nine-roast process
- Pack sun-dried sea salt into bamboo cylinders and seal firmly with ochre clay
- Roast over a pine-wood fire, then crush the roasted salt
- Repeat nine times in total; on the ninth the salt is melted and crystallised at around 1,700°C
- Grind the crystals and finish as powder or in solid form
Through this process the sulphur amino acids from inside the bamboo, the minerals of the ochre clay and the energy of the pine fire permeate the salt, producing its characteristic purplish tone and flavour.
What the purple colour means
Bamboo salt roasted nine times takes on a deep purple. No colouring of any kind is used; the colour is a visual sign that the roasting stages have been completed.
